指在一定的生物反应器内，通过酶制剂的改组、修饰、固定或创造新的酶类制品等途径，改善酶制剂的稳定性、催化能力、专一性、调节性及使用条件，寻求和开发极端条件（如耐高温、耐酸碱、耐盐、耐有机剂）的酶产品。
