简述果酒发酵的前发酵过程。
①自然发酵:果汁经糖酸调整后装人发酵池,采用密闭式发酵。糖分大部分已转变成酒精,完成了主发酵。②人工发酵:果汁糖酸调整后,进行消毒杀菌,再接入人工培养的酵母菌。果汁也可加人亚硫酸盐进行杀菌。
