食品化学分析

是指食品卫生分析过程中所用的各种化学分析方法。化学分析，分为定性和定量两部分。定性分析是测定样品中有无某种成分存在。定量分析是测定样品中某些化合物或混合物成分的含量，或者是测定已知某物质的绝对量。
